Lately, the foodies on IG have got me in my “quick and delicious” era. I’m usually on the go, it’s either grab some processed crap or hit up a drive-thru (which I'm doing my best to avoid). Typically I’ve got a 20 minute window to make a quick snack. These ones I’m about to share with you SLAP. I promise! These are satisfying and filling, you can actually substitute them as an entire lunch or even better, “Girl Dinner.” I’m about to blow your mind with how simple and how delicious my favourite snacks are.

Chicken NO Chicken Openface Sandy (V) - This one’s going to blow your mind. It’s got all the flavour, and I call it the “Chicken NO Chicken Sandy” because it tastes exactly like a chicken sandwich. Anyone who has tried this snack is obsessed with it. First of all, it can be vegan or not, depending on whether you want to add a dairy feta or a vegan feta to finish it off.

It’s that simple. Toast your bread to your desired doneness. Generously spread your Cilantro Chili sauce over your toast. Layer the thinly sliced cucumber and tomato and salt the top of your veggies.
